Goat Cheese and Spinach Pinwheels

These flaky, savory pinwheels make an easy appetizer, brunch addition, or party snack. Creamy goat cheese, tender spinach, and flaky pastry come together in every bite.

Serves: 6–8

Prep Time: 15 minutes

Bake Time: 20–25 minutes

Ingredients

1 sheet puff pastry, thawed

4 oz goat cheese, softened

1 cup fresh spinach, finely chopped

1 garlic clove, minced

1 tbsp olive oil

1 tbsp fresh chives or parsley, chopped

1 egg, beaten (for egg wash)

¼ tsp sea salt

¼ tsp black pepper

Instructions

Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a small skillet, heat olive oil over medium heat. Add spinach and garlic and cook for 1–2 minutes, just until wilted. Remove from heat and allow to cool slightly.

In a bowl, combine goat cheese, spinach mixture, herbs, salt, and pepper until evenly mixed.

On a lightly floured surface, roll the puff pastry into a rectangle if needed. Spread the goat cheese mixture evenly over the pastry, leaving a small border around the edges.

Starting from the long side, tightly roll the pastry into a log. Place in the refrigerator for 10–15 minutes to firm up for easier slicing.

Slice into ½-inch rounds and arrange on the prepared baking sheet. Brush the tops with beaten egg.

Bake for 20–25 minutes, or until puffed and golden brown.

Allow to cool for a few minutes before serving.

Serving Suggestions

Serve warm alongside a fresh salad, as part of a brunch spread, or on a charcuterie board. For extra flavor, drizzle lightly with honey or sprinkle with a pinch of herb seasoning salt before serving.

Farmhouse Tip: Add chopped sun-dried tomatoes, caramelized onions, or roasted red peppers to the filling for a delicious variation.

Goat Cheese and Wild Mushroom Risotto

Creamy, earthy, and comforting, this Goat Cheese & Wild Mushroom Risotto is a beautiful centerpiece for a cozy dinner. The richness of wild mushrooms pairs perfectly with tangy goat cheese, creating a dish that's both elegant and deeply satisfying.

Serves: 4–6

Prep Time: 15 minutes

Cook Time: 35–40 minutes

Ingredients

1½ cups Arborio rice

6 cups vegetable or chicken broth, warmed

8 oz wild mushrooms (such as cremini, shiitake, oyster, or a blend), sliced

4 oz goat cheese, crumbled

1 small onion, finely diced

3 cloves garlic, minced

2 tbsp olive oil

2 tbsp butter

½ cup dry white wine (optional)

¼ cup grated Parmesan cheese

1 tsp fresh thyme leaves

½ tsp sea salt, or to taste

¼ tsp freshly ground black pepper

Fresh parsley, chopped, for garnish

Instructions

Sauté the mushrooms.

Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet or Dutch oven over medium-high heat. Add mushrooms and cook until golden brown and tender, about 6–8 minutes. Stir in thyme and set aside.

Cook the aromatics.

In the same pan, add the remaining olive oil and butter. Sauté the onion until softened, about 3–4 minutes. Add garlic and cook for 30 seconds.

Toast the rice.

Add Arborio rice and stir continuously for 1–2 minutes until lightly translucent around the edges.

Add wine.

Pour in the white wine and stir until mostly absorbed.

Build the risotto.

Add the warm broth one ladle at a time, stirring frequently and allowing each addition to absorb before adding the next. Continue for 25–30 minutes until the rice is creamy and tender with a slight bite.

Finish the dish.

Stir in the sautéed mushrooms, Parmesan cheese, goat cheese, salt, and pepper. Mix gently until the cheeses melt into the risotto.

Serve.

Spoon into bowls and garnish with fresh parsley, additional goat cheese crumbles, and a sprinkle of thyme if desired.

Serving Suggestions

Pair with a crisp green salad, roasted asparagus, or crusty artisan bread. A glass of dry white wine complements the earthy mushroom flavors beautifully.

Farmhouse Tip

For even deeper flavor, finish with a drizzle of truffle oil or a sprinkle of mushroom seasoning salt just before serving.
